Ingredients

  • 4 ounces gluten-free brown rice noodles

  • 1 tablespoon gluten-free tamari
  • 1 tablespoon lime juice
  • 1/2 teaspoon toasted sesame oil
  • 2–4 tablespoons warm water

Instructions

  1. Cook noodles according to package directions, drain, and rinse with cool water.
  2. Whisk peanut butter, tamari, lime juice, sesame oil and 2 tablespoons warm water until smooth.
  3. Toss sauce with noodles. Add extra water a spoonful at a time if needed. Serve immediately or chill covered.

Low-energy prep tip

Make the noodles ahead, cool promptly, and keep covered in the refrigerator.

Recipe notes

Use tamari labeled gluten-free rather than regular soy sauce.
