Servings: 3 | Suggested prep time: 15 minutes | Estimated cooking time: 30 minutes

Ingredients

  • 1 block (14 ounces) extra-firm tofu, drained and patted dry
  • 2 tablespoons gluten-free tamari, divided
  • 1 tablespoon cornstarch
  • 1 tablespoon neutral oil
  • 3 tablespoons peanut butter
  • 2–4 tablespoons warm water

Instructions

  1. Heat oven to 400°F (200°C). Cut tofu into 3/4-inch cubes and pat dry.
  2. Toss tofu with 1 tablespoon tamari and oil, then coat lightly with cornstarch. Spread on a parchment-lined baking sheet.
  3. Bake 25–30 minutes, turning halfway, until edges are crisp.
  4. Whisk peanut butter, remaining tamari and 2 tablespoons warm water. Add more water until pourable; serve alongside tofu.

Low-energy prep tip

Bake tofu on parchment paper; whisk sauce in a small bowl.

Recipe notes

Drying the tofu well helps the coating crisp.
